As this was my first winemaking attempt, I followed the directions for the beginner wine in the Terry Garey book "the joy of home winemaking". I think it was just meant to be a simple idiot proof method, so the S.G. was not recorded in the beginning. All it called for was apple juice, lemonade conc. sugar, water, pectic enzyme and yeast. No acid powder, nutrient, campden tablet or tannin. I found the recommendation on the bulletin board for a stuck fermentation. Would you recommend that at this point? What will the S.G. be when it is finished (I assume near 1.00?)

: If the hydrometer reading is 1.030 it looks like you got a stuck fermentation. The fact that your wine is starting to clear also indicates that fermentation has stopped. What was your starting gravity? Did you add any nutrients?
