Do shrink caps serve a functional purpose or are they just for decoration?
Problem: I'm brewing red (and some white) wines with intent to store for 2-4 years.
My understanding is that the corks should be left exposed for maturation of the wine,
for a period of time, then sealed. Would shrink caps serve this purpose or not? Also
occaisionally I have a minor problem with a white fluffy mold growing on the surface
of the cork of some of the older bottles. This does not penetrate the cork to cause any
spoilage/off flavour. Would shrink caps prevent this mold from forming?
Any comments appreciated...Gary
