Sauvignon Blanc is indeed a good candidate for oaking. As a matter of fact Fume Blanc is actually a fancy name for Sauvignon Blanc that has been aged in oak giving it a smokey, toasted flavour. As with all white wines you should be careful adding oak because it can easily overpower the delicate flavour of the grape. I recommend using about 50 grams of oak chips or powder to the primary fermenter for the first week. Use this as a starting point. If the oak flavour is not strong enough you can always add more in the secondary.
