Here is a recipe for your grapes.

Concord Grape Wine
(Yeild 5 US gallons.)

6 lbs Fresh Grapes
5 pts water
3 1/4 cups sugar
1 tsp Pectic Enzyme
1 tsp Nutrient
1 Campden Tablet (crushed)
1 pkg Wine Yeast

Starting S.G. 1.090-95
Acid Level .65%

METHOD:
1. Wash, remove from stems, and discard moldy or badly bruised fruit.
Use a nylon straining bag or a grape press to crush the grapes and strain the juice into a primary fermenter.
2. Keep the pulp in a straining bag, tie it up and place it into the primary fermenter with the juice.
3. Stir in all other ingredients EXCEPT the yeast. Cover the fermenter.
4. After 24 hours add the yeast and cover loosely or use a lid with an air lock.
5. Stir daily, check the Specific Gravity and press the pulp lightly to aid extraction.
6. When the Specific Gravity reaches 1.030 or lower light press the juice from the bag and siphon the wine into a glass carboy. Attach an air lock.
7. The fermentation is complete when the S.G. reaches 1.000 — about 3 weeks. Siphon the wine off into a clean carboy and reattach the airlock.
8. To aid clearing siphon off again in 2 months and add finings.

When your wine is clear filter if desired and bottle. Add 1 Campden tablet per gallon before bottling. If you desire a less drier wine you can add wine sweetener before bottling.
