Without conditioner, this should produce a fairly dry
wine. For sour cherries, just use 1 tsp less acid blend.
Total acids should be about 0.5% as tartaric.

for 1 gallon:
3 lbs sweet cherries
2 lbs granulated sugar
1 gallon water
3 tsp acid blend
.25 tsp wine tannin
2 campden tablets
1 tsp yeast nutrient
.5 tsp pectic enzyme
yeast - Lalvin K1-V1116 Montpellier
