1.5 Kg Briess Golden Light Malt Extract
1 Litre of Hi-Maltose Syrup
1/2 oz Goldings Hops (boiling)
1/2 oz Goldings Hops (finishing)
2 pkgs of Nottingham Yeast

Method:
Add Malt Extract to 6 Litres of water in a large boiler.
Bring to a boil while stirring to dissolve syrup.
Add boiling hops and boil for 30 minutes. BEWARE OF BOILOVERS!
Add Hi-maltose syrup and stir to dissolve. Remove the pot from heat.
Add the finishing hops and let stand for 5 minutes.
Cover the pot and stand it in a sink of cold water for 20 minutes.
Pour into your fermenting bucket and top up to 23 litres with cold water.
Stir vigourously for 5 minutes. Take a temperature reading.
If the temperature is below 30º Celsius sprinkle the 2 packets of yeast on top.
Seal with lid and attach an air lock. Ferment at 20 - 25º C. for 5 days.
Transfer to a carboy and let stand in a cold place (don't let it freeze) for 10 days.
Bottle using 1 1/2 cups of corn sugar. Let stand for 10 days at 25º Celsius. Move to
a cold spot for another 7 days. Serve and enjoy.
