This recipe produces a "vin ordinaire". It is economical
and is intended for everyday drinking. This wine is usually
drinkable within weeks of fermentation.
Recipe for 1 Imperial gallon.
6 cups of canned apple juice.
4 cups of sugar
1/2 tsp citric acid.
1 tsp pectic enzyme.
1 tsp yeast nutrient
1/2 tsp yeast energizer
1 pkg Lalvin EC-1118 wine yeast.
water to make up 1 gallon.
Pour all ingredients into a jar or plastic bucket. Top to 1 gallon
with water. Stir well to dissolve sugar. Add yeast. Fit an air
lock and ferment at 70º - 75º F. When fermentation is
almost ended ( about 3 weeks) add 1 campden tablet, then 5 days
later siphon into another 1 gallon jar and top up with cooled
pre-boiled water. Fit airlock and move to a cool place. The wine
is drinkable when it clears, and this normally only takes a few
weeks. This will make a very dry wine. Add wine sweetener and
conditioner if you like a sweeter wine.
