Shrub

There are innumerable ways of making shrub. Here is a simple recipe.

  1. Begin with gentle fruit juices. Put a little less than 1 pint orange juice and the juice of 2 or 3 lemons into a half-gallon or gallon jar. Before squeezing the lemons, peel the rinds very thinly and add them as well.
  2. Add 2 quarts rum. Cover and let stand for three days.
  3. Put 2 pounds sugar into 1 quart water and bring to boil.
  4. Add the sugared water to the rum and fruit juice, cover, and let stand for two weeks. Then strain and bottle.

Almond Shrub

  • 1 qt. rum or brandy
  • 1 glass orange juice
  • rind of 1 lemon, sliced and scraped
  • 1/2 to 1 lb. sugar
  • 1 glass milk
  • 5 to 10 drops essence of bitter almonds

Put into gallon or half-gallon jar the spirits, lemon peel, orange juice, and sugar. Now take the essence of bitter almonds (you can use any amount you please) and add it to the glass of milk. Mix thoroughly and pour into the jar. Cover, put in a warm place (65-70 degrees fahrenheit), and keep it there until the milk has curdled. This takes from one to three hours. Then filter through filter paper and bottle. Rest it for two weeks before drinking it.

Rum Shrub

  1. Pare 6 oranges very thinly and put the rinds into a gallon jar. Add the juice of the fruit.
  2. Add 1 pint cold water, close the jar, and let the liquid stand for three days, stirring it now and then.
  3. Strain into an enamel dish, add 2 to 3 pounds sugar, and bring to a boil.
  4. Add a full pint of orange juice and strain it again. Finally, add about 2 quarts rum and bottle.

It is a fine drink on a cold day, and you can use it a week after you have made it.
