Situated
in the Heart of the South Pacific, New Zealand boasts
an unsurpassed climate and environment for the production
of high quality grain and seed crops. In fact, the
island whilst only about the size of Great Britain,
spans nearly 12 degrees of latitude, providing a rich
range of micro-climates, from which springs a wealth
of clean, healthy produce. This climate, a pollution-free
environment, responsive young soils and a comparative
freedom from pests and disease, offers superb conditions
for the production of high quality two row malting
barley and hops - the ingredients which make up Black
Rock
Black Rock homebrew - -- kits are made by the Black
Rock Brewing Company of Auckland, New Zealand. The
Company believes that there is no artificial way to
produce malt or malt extract, and uses traditional
methods to manufacture its high quality range of homebrew
concentrates. It also believes that the only way to
produce a superlative homebrew concentrate is by setting
out to produce a superlative beer. At Black Rock the
chief arbiter of quality is therefore a skilled brewmaster.
This
combination of traditional methods, brewing expertise
and the use of only the very best New Zealand ingredients
- two row malting barley, hops and some of the purest
water in the world - ensures a premium product which
delivers superb quality and taste. Intimate control
of the entire process - from the growing of the barley
to the concentration of the wort- guarantees the consistency
and high standard of every can of Black Rock on the
shelf.
balanced to brew superb beers, modelled on the finest
tradition of brewers art.
Ingredients:
Two row Malting Barley:
All malting barley is sourced from New Zealand's rich,
fertile Canterbury plains - acknowledged as the home
of some of the finest malting barley in the world.
All barley is carefully checked before submission
to see that it complies with Black Rock's exacting
malting barley specification.
Nelson Hops: Nelson
provides ideal growing conditions for hops. Long hours
of sunshine interspersed with regular rainfall and
relatively wind free conditions, produce high alpha
acid hop varieties with essential oil profiles ideal
for the production of great beers. Hop varieties used
are Superalpha, Sticklebract and New Zealand Hallertau
for aroma.
Water:
New Zealand has some of the purest water in the world,
due to its location down under, and strong community
awareness of the environment.
Yeast:
The yeast supplied with Black Rock Homebrew beer kits
has been selected aHer two years of exhaustive testing
of yeast cultures from all over the world. Black Rock
continues its yeast development and testing work,
endeavouring always to improve the taste of the beer.
The
process includes:
Steeping: Cleaned
barley is covered in water then drained at precise
intervals until germ ination is triggered. Oxygen
is supplied during the steeping or wetting process
so the barley starts to breathe. This takes 1 to 2
days.
Germination: The
steeped barley is then taken to a large room where
the temperature and humidity are carefully controlled
to provide ideal germination conditions. Here rootlets
sprout from the grain and enzymes are released inside.
These enzymes break down the starchy body (or endosperm)
of the grain and create the sugars and proteins needed
for fermentation. This process continues until the
maximum amount of sugars and proteins can be extracted
from the malt about 5 days.
Kilning: After
germination, the malt is 'kilned' to create the flavour
and stabilise the malt. The malt is first slowly dried
to lower the moisture level and stop germination,
then cured. This toasts the malt to produce its character
istic flavour and colour.
Malt
Extraction: The extract facility uses only
traditional brewing methods to produce a brewing wort
of the highest possible quality before concentration
begins. Whole hops are boiled with the wort rather
than the use of hop extracts. Every facet of the process
is monitored to the brewmaster's exacting standards.
