Jamaican Ginger Ale
Ingredients
for 18.9 liters (5 U.S. Gallons)
3 3/4
lbs cane sugar
3 3/4
oz fresh grated ginger root
1 oz
cream of tartar
4 lemons,
quartered (juice, seeds, rind and all).
1 package
ale yeast.
Add 6 liters of water to a large boiler add all ingredients
except yeast and simmer for 30 minutes. Add to a fermenter
with enough cold water to make 18.9 liters. Cool to 25 degrees
Celsius and pitch yeast. Ferment for 24 hours and rack.
When fermentation is over bottle and prime using 3/4 cup
of corn sugar.
This
brew was described as, "A fiery, very gingery, interesting,
tart, spicy and god awful."
